Finca: El Tractor

Don Gabriel

Over the mountain in La Sierra neighborhood, commune 8 of Medellín, there is El Tractor Farm.  Don Gabriel Cortes has the highest grown and also one of the highest scored coffee that we have, his red bourbon coffee recently won the best coffee cupped in Medellin award and the 4th place in the Master of Cafe Colombia.

The coffee is grown in La Sierra, Medellin at 2,300 meters above sea level. He has been a farmer since he was a child however, like many in the mountains above the Aburrá Valley, Don Gabriel is a survivor. He
came to La Sierra displaced from his farm in Vegachí by violence in the region more than 16 years ago,
as a result of this he left everything and started a new chapter in his life growing his award-winning
coffee on the outside skirts in Medellin.

This is a special batch with an experimental fermentation process.

Don Gabriel has a very strict cherry selection criteria on his farm, once the cherries are picked by hand, he brings them to the processing centre. After screening, only the ripe cherries are allowed into the fermentation process.

This quick lactic fermentation allows for the growth of lactic acid bacteria under anaerobic conditions with oxygen restriction and high temperature. The bacteria feed on the sugar present in the mucilage, generating a high concentration of lactic acid, checking constantly the PH level and temperature. After fermentation, the coffee is sun-dried with the skin on patios and drying beds until 11% humidity.

The total time for the fermentation is 76 hours.
